  • 4 medium potatoes peeled and diced into medium-size cubes
  • 1 cup water (or enough to cover potatoes, adding more if necessary)
  • 1/4 cup onion, diced
  • 1/2 cup celery slices
  • 1 chicken bouillon cube or 3 cups of chicken stock
  • 1 1/2 cup milk
  • 3 tablespoons butter
  • 1 tablespoon flour
  • 1 teaspoon parsley flakes
  • Salt to taste
  • Pepper to taste

Preparation Of My Potato Soup:

In a stockpot, combine potatoes, parsley flakes, salt, pepper and chicken stock (or bouillon cube). Allow the potatoes to boil until tender. Reduce heat and allow mixture to simmer.

In a small pan, melt butter over medium heat and add onions. Stir until onion is soft and translucent, but do not allow to brown. Add onions to potatoes and broth.

Combine flour with milk and stir until fully combined. Make sure it is not lumpy. Add salt and pepper to the smooth flour-milk mixture. After mixing thoroughly, add to soup pot.

Remove obvious strings from the celery slices and add to soup. Celery should be added as close to the end as possible to prevent overcooking. It should also be cooked enough so that it is not extremely crunchy.

Allow soup to simmer on low for at least 30 minutes so that all the flavors can combine. Serve soup hot. Leftovers should be covered and stored in a refrigerator for up to a week or frozen for up to one month.

If adding cheese or other ingredients: Add cheese, croutons or oyster crackers to soup after serving. Cheese is always best when it is not cooked into the soup. Crumble it on top and allow it to melt. Croutons will absorb the soup but not appear soggy, if placed in the soup after serving. Chives can also be added after cooking time as a garnish.

This is also the perfect time to add bacon crumbles or pre-diced ham to potato soup. Avoid cooking small bits of ham into the soup if the goal is to be able to bite into the ham. To get a smoked ham flavor in the soup, add a large chunk of ham to the soup mixture with potatoes and chicken stock at the beginning of cook time.
